Theme-park version of N'awlins is still pretty "bon temps.". The Scene
Huge and open, loud and friendly, Jazz houses a big bar, a giant dining room and a cool band blasting over your dinner conversation. The crowd is adult, mostly couples and tables of friends--great for large groups. Brick walls and a pressed-tin ceiling hold hundreds of beer neons and Mardi Gras gris-gris.

The Food
Somehow the servers make their way through a room packed with patrons, tables and chairs to serve a Texas version of traditional New Orleans fare. The mixed appetizer platter ($7.49) comes with fat beer-breaded onion rings, popcorn shrimp, mushrooms and a hot boudin jambalaya. The gumbo ($3.49 a cup) is good--a chicken and sausage version in a musty green roux. The snapper New Orleans comes fried and topped with seafood Creole. It's tasty but loaded with crab substitute--a bit disappointing for $13.99. The crawfish étouffée ($11.99) is creamy and loaded with sweet crawfish, and the dessert special, turtle cheesecake ($3.99), is wonderfully rich. Skip the chewy beignets ($1.99).
