Austin >Franklin Barbecue
You may hear more about Coopers, Mueller's, or Smitty's, but anybody who knows barbecue in the Lone Star State will tell you that the king of Texas Q is a young man named Aaron Franklin, whose low-key, modern Austin restaurant puts the lie to all the old-timey rigamarole associated with the state.
Almost everyone will argue that Franklin has the best brisket in town. If you want to try it, be willing to wait up to 3 hours. Starting at 9 am because they usually sell out by 11! This is no joke. But it will be worth it.
There's a reason folks stand in line for hours to get a sliver of this stuff. Line up early at this east side BBQ shack, and see what all the fuss is about. In a nutshell: BBQ that's been prepared in a smoker with special, magical wood, with BBQ sauce that's almost OCD in its extremely delicate, highly delicious ingredient combination.
The 2 hour line speaks for itself. Franklin BBQ probably has the best brisket in Austin & the sausage is great too. You can skip the line if you call in a 5lb order or more.
