Collie's is a new food trailer in Austin founded by Rob Collie, whose massive, winning smile rivals the epic burgers he shills. They are huge, and they are amazing. Take the Butter Sauteed Crimini Mushroom and Swiss Burger, for example: This writer's favorite one on the menu. Rich and gargantuan, it's sin on a plate. Collie's half-pound patties are hand-ground blends of chuck and brisket, and according to Collie, as "local as we can find." So while consuming your burger you may feel like a cavemen, but at least an environmentally-conscious one.
