Thin and Crispy. Everything you could want in a pizza joint– local beer (and rootbeer!) on tap, a chill atmosphere, friendly waitstaff, and some the best thin crust pies you’ll find in Austin.

Nouvelle pizzeria offers hand-tossed, crusty goodness.. Inside this humble, flame-colored building is a huge brick-fronted wood-burning oven, carefully set back from the counter so the staff won't get too hot (a tragic pizza casualty). The pizza oven is also

used to roast olives, which become juicy and meatier from the

treatment and are a yummy appetizer as the main attraction crisps to

perfection. A simple menu of nine sizzling pies are traditional only

in their foundation: savory-sweet tomato sauce, cheese, crust.

Toppings take a detour towards more exotic, Neapolitan-style fare:

Stilton, port reduction, pork belly, and arugula replace pepperoni and

pineapple.
