This is Cajun-style gumbo, with a nice, dark, stew-like roux, and it pairs particularly well with a spoonful of spicy jambalaya. If you're absolutely starving, chomp on a po-boy (I like the shrimp) – they don't hold back on seafood fillings here, even on enormous, gastrointestinal-threatening foot longs.
