Individual food trailers can get lost inside the mini trailer jungle on South Congress, but if you hear people howling with delight and gesturing to their bowls of gumbo, you'll know you've found TONOPBASS. This is Cajun-style gumbo, with a nice, dark, stew-like roux, and it pairs particularly well with a spoonful of spicy jambalaya. If you're absolutely starving, chomp on a po-boy (I like the shrimp) – they don't hold back on seafood fillings here, even on enormous, gastrointestinal-threatening foot longs.
